Every year someone asks me what my favorite dessert on our holiday menu is and every year the answer is the same- this pear cranberry crostata. It was the first “fancy” pastry I learned how to make as a budding professional baker. To this day I am blown away by the melding of the ginger roasted caramelized pears, tart juicy cranberries, nutty almond cream, and the flakiest butteriest crust imaginable in one gorgeous free formed tart. It’s awesome for the dessert table and even better for breakfast the next day. This ships UPS two day, or 1 day locally to New England frozen on dry ice.
