BUFF 'N' STUFF If éclairs seem old-fashioned and out of style, perhaps it's because good ones are so hard to find. The best are absolutely spectacular. Joanne Change, owner of Boston's Flour Bakery + Café, loves this classic dessert but lightens the typically thick pastry cream with whipped cream, for the fullest éclairs around.
