Since opening the place nearly four years ago, Chang's never gotten over her cheerful smile. Neither have her fans, who come for the fine pastries, savory pockets and cakes. A man in denim peels away sections of The New York Times as the sun brightens the silver-gray walls. "I'll have a . . ." starts another man in a pinstriped suit, his eyes glazed by the selection: raspberry-filled "pop" tarts, thick blueberry muffin cakes, brioche au chocolat. I feel the pang of indecision in his pause. ". . . cinnamon cream brioche, he breathes.
